芝士肉鬆軟包





經過上次的菠蘿包黏手事件後, 連日來得到網友們的安慰,鼓勵和指導, 真的多謝你們; 今日揀了Elsa 的芝士肉鬆軟包來整, 貪佢夠簡單, 今次情況已有好轉, 沒有了黏手問題, 但是樣子就有d強差人意了!!

芝士肉鬆軟包 (直接法) from Elsa

高筋麵粉 200g
乾酵母 4g
水 100g
蛋 20g
糖 30g
鹽 2g
牛油 12g

1. 將所有材料拌勻(牛油在成麵團後才加)並搓至滑身成簿膜
2. 第一次發酵至2-3倍大
3. 分割成4個小麵團及勻圓它們,靜止5分鐘
4. 整型後第二次發酵至2倍大
5. 輕手塗蛋液在麵團面
6. 舖肉鬆再舖芝士 (肉鬆最好給芝士蓋住,否則易烘燶)
7. 入預熱190度焗爐焗15-20分鐘
