生炒糯米飯

Fried Glutinous Rice

上星期做了一個失敗了的糯米飯後,今日再試過,"只許成功不可失敗" 總算是勉強合格了!

婉子, 我是用以下方法做的, 我是用易潔鑊.這個份量大概是2個大人的晚餐份量.

材料:
糯米300g
特瘦臘腸 1條
臘肉1/4 條
瑤柱 4粒
蝦米 適量(無量過)
冬菇 6粒

調味料:
生抽 2茶匙
糖 2茶匙
煲仔飯豉油 2茶匙
鹽 1/2茶匙
水 1碗
做法:
1. 糯米用溫水浸3小時, 瑤柱用溫水浸2小時後整成絲再浸1小時, 蝦米浸軟, 冬菇浸軟.
2. 將臘腸&臘肉切粒, 浸好的冬菇切粒.
3. 白鑊加熱, 落臘腸&臘肉炒至出少少油, 加入瑤柱絲, 蝦米和冬菇粒, 炒至熟, 裝起備用.
4. 糯米隔水. 在鑊內加入1-2湯匙油, 用中細火, 放入糯米, 炒幾下等大部份糯米都沾到油, 將糯米壓平在鑊內, 幾秒後, 炒勻, 再壓平, 中間分多次加入調味料炒勻, 壓平, 大約二十分鐘後, 可以試下糯米已熟, 加入臘腸&臘肉, 瑤柱絲, 蝦米和冬菇, 炒勻即成.
