紙包蛋糕

由於上一堂蛋糕課的蛋糕須要時間雪藏的關係, 所以ah sir在空閒時間示範了做紙包蛋糕, ah sir真的做得很好, 做好後我們即時試食, 大家都覺得很美味呢~~昨天買了已摺好蛋糕型的紙, 今天誓要做一次美味的紙包蛋糕~~

紙包蛋糕

材料~~
蛋白 96g + 糖 40g
蛋黃 55g + 糖 30g
低粉 36g
粟粉 17g
鹽 少少
牛油溶液 50g

做法~~
1. 低粉, 粟粉, 鹽 一同篩好備用 & 準備牛油溶液
2.蛋白+糖 打至企身 (糖分3次加入)
3.蛋黃+糖 打到奶白色 (糖分3次加入)
4.將蛋白分數次加入蛋黃, 輕手伴勻
5.將麵粉、粟粉和鹽加入蛋漿內,輕手及快手伴勻
6.加入牛油溶液,快手伴勻
7.盡快倒入杯內,約8成滿 (ah sir 是用手取粉漿 再“ji”入紙杯內)
8.用180度,焗15-20分鐘
